Piggy Party Cake

By

I found this recipe at Taste and it is from Super Food Ideas magazine.  The picture caught my eye straight away. Wouldn’t this be great at a kids party?  They call it “Party Pig”.  I loved it because it isn’t hard to do but it looks sensational.

Here is the recipe:

Ingredients
2 packets White Wings Golden Buttercake packet cake mix
1 quantity basic butter icing (see recipe below)
pink food colouring (see tip)
24cm round cake board

Decorations
1 Mint Slice biscuit
120g packet raspberry sour straps
2 black Smarties
2 Raffaello chocolates
2 pink Smarties
1 red Lifesaver, halved
party hat

Method
Preheat oven to 160°C. Grease two 7cm deep, 15cm (base) round cake pans and line base with baking paper.

In 1 large bowl, prepare packet cake mixes following packet directions. Spread evenly between cake pans. Smooth surface. Bake together for 40 to 45 minutes or until cooked. Cool cakes in pans for 5 minutes. Turn onto wire racks to cool completely.

Tint basic butter icing with pink food colouring until desired colour is reached.

Trim tops of cakes to sit flat. Place 1 cake in centre of board. Spread icing over the top and side of cake. Using a hot knife, smooth icing. Using a 7cm round cutter, cut a round from remaining cake and position in centre of iced cake for the nose. Spread icing over top and side.

Cut the biscuit into a triangle and position as the ear. Cover with icing. Cut a semi-circle from the sour strap and place on ear. Using a little icing to secure, attach black Smarties to Raffaellos and position as eyes. Position pink Smarties as nostrils and Lifesaver half as mouth. Cut a bow tie from the sour strap and place under cake. Top pig with party hat.

Of course, being me, I can see lots of different ways to present this cake.  Imagine it at Halloween with fangs and a bat on her cheek?   How about with a snorkel and goggles for a mermaid party?   Don’t be limited by the ‘dressing’ of this cake.  There will be lots of ways for you to present it.

Now, pass me some cake, please…
